ZESTY MAHI-MAHI & ONIONS

Mahi-mahi has a strong flavor and slightly unique texture that people either love, or well...don’t love. This recipe has great zing and is balanced by the intensity of the onions and garlic. 

INGREDIENTS
  • 6 mahi-mahi fillets
  • 1 small yellow onion, diced
  • 1 lime, juiced
  • 2 Tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper

DIRECTIONS​
  1. Preheat the oven for 425 degrees. Place the mahi-mahi on a 9 x 13 glass baking dish. 
  2. In a medium size bowl whisk together the lime juice, olive oil, garlic powder, salt, and pepper. Toss in the yellow onions.
  3. Spoon the mixture over each fillet.
  4. Place in the preheated oven for 25 minutes or until the fish is cooked through.
