I love making this delicious kale salad for an early dinner or lunch. It is one of my most favorite and requested salads due to the zing of the dressing and the hidden sweet ingredients.
Baby kale has a more tender leaf than regular kale. However, you can use chopped regular kale for this salad, you simply may want to allow the kale to sit refrigerated in the dressing for a bit longer as this will allow the regular kale leaves to become more tender.

INGREDIENTS
- 6 cups baby kale
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil, light tasting
- 1/4 cup honey
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 1/4 sweet onion, thinly sliced
- 2/3 cup strawberries, sliced
- 1/2 cup raisins
- 1/2 cup cashews, chopped
- 1/3 cup sunflower seeds, shelled
DIRECTIONS
- In a small bowl whisk together the vinegar, olive oil, honey, salt and pepper.
- In a large bowl toss together the kale, onions, strawberries, raisins, cashews, and sunflower seeds. Add the dressing to the salad, toss to coat and serve.
