VEGAN CILANTRO DRESSING

There is little that tastes better than a fresh salad with this zesty dressing. Consider topping you salald with more avocado, olives, bell peppers, and sliced almonds. 

INGREDIENTS
  • ½ cup olive oil
  • 1 avocado
  • 2 Tbsp lime juice
  • 2 tsp coconut nectar (or honey if non-vegan)
  • 1 garlic clove
  • 2 cups fresh cilantro
  • ½ tsp ground cumin
  • ½ tsp sea salt

DIRECTIONS
  1. Place all ingredients into a powerful blender and puree until completely smooth. Serve over fresh greens, bell peppers,  and lots of other fresh marvelous toppings. ​
