VEGAN CANDIED PECANS

Candied nuts commonly use egg whites to give them a crispy exterior. But these vegan candied pecans are nothing to complain about, and definitely move quick in our house. The flavor is perfect without any refined sugar and pecans are a great source of energy. 

These are great to have around and munch at your leisure, bag them up as gifts, or use them in salad or over tasty fruit and cream!

INGREDIENTS
  • 3 cups pecans
  • 3 Tbsp coconut syrup (or honey if non-vegan)
  • 1 Tbsp coconut oil, melted
  • 1 tsp cinnamon
  • 1/4 tsp salt

DIRECTIONS
  1. Preheat your oven to 250 degrees. Line a baking sheet with parchment paper.
  2. Place the pecans in a medium size bowl. In a separate small bowl, whisk together the coconut syrup, oil, cinnamon, and salt. Continue whisking until combined.
  3. Pour the wet mixture into the pecan bowl and toss until evenly coated.
  4. Pour the mixture onto the prepared baking sheet and spread out the pecans into an even layer.
  5. Bake in the preheated oven for 1 hour, tossing every 20 minutes.
