Many people just can't handle tomatoes, a member of the nightshade family. The type of lectin that tomatoes are primarily comprised of tend to stimulate a greater release of stomach acid. This in turn leads to more digestive distress. Bell peppers are also a member of the nightshade family but do not typically cause the same level of stomach discontent.
The bell peppers in this BBQ sauce give it a nice sweet flavor and is paired wonderfully over shredded slow cooker chicken.

INGREDIENTS
- 1 Tbsp olive oil
- 4 bell peppers, chopped
- 1 large yellow onion, chopped
- 1/2 jalapeno pepper, seeded & chopped (sub for pepper to taste if sensitive)
- 3 cloves garlic
- 1/3 cup honey
- 1/3 cup apple cider vinegar
- 1 tsp chili powder
- 1/2 tsp salt
DIRECTIONS
- In a medium size pot heat the oil over medium-high. Saute the peppers, onion, jalapeno and garlic until tender, about 6 minutes. Add in the honey, vinegar, chili powder and salt. Reduce heat to low, cover and simmer for 20 minutes.
- Transfer to a powerful blender and puree until smooth. Add more salt and spices if desired.
- This makes a fairly large batch so plan on keeping about 1/2 in the fridge to be used within 3-4 days after preparation, and storing the rest in the freezer for a future use.
