SWEET SLOW COOKER CHICKEN

You may find yourself drooling mid-day thinking about this tasty dish. The beauty of slow-cooked meals is they are typically moist, packed with flavor, and most importantly, make awesome leftovers! 
This recipe is great in a wrap and is tomato-free making it practically a magic trick for a dish like this.

INGREDIENTS
  • 2 lbs chicken breast
  • 1/2 cup broth
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 1 Tbsp prepared mustard
  • 2 cloves garlic, minced
  • 2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
 
  • 1/2 Tbsp olive oil
  • 1 yellow onion, sliced
  • 3 mini sweet peppers, julienned (or 1 large bell pepper)
  • 2 heads of romaine

DIRECTIONS​
  1. Place chicken at the bottom of a large slow-cooker.
  2. In a small bowl whisk together the broth, vinegar, honey, mustard, garlic and spices. Pour over chicken.
  3. Cook on low for 5 hours or until chicken is no longer pink. Remove chicken, shred and return to crock pot for 1 more hour. 
  4. *In a large saute pan heat oil over medium-high. Add the onion and bell peppers. Saute until onion is translucent, about 5 minutes. 
  5. Prepare the romaine lettuce by cutting about 2 inches up from the base. Wash the leaves thoroughly and lay on a paper towel to dry.
  6. Add chicken to the bottom half of a romaine leaf, top with onions and pepper and fold the other half of the lettuce over making a vitamin packed sandwich wrap.

​*You can also simply add the onions and peppers to the pot during that last hour of cooking. Doing so however will cause them to be a bit softer.
