INGREDIENTS
- 2 lbs chicken breast
- 1/2 cup broth
- 1/4 cup apple cider vinegar
- 1/4 cup honey
- 1 Tbsp prepared mustard
- 2 cloves garlic, minced
- 2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp paprika
- 1/2 Tbsp olive oil
- 1 yellow onion, sliced
- 3 mini sweet peppers, julienned (or 1 large bell pepper)
- 2 heads of romaine
DIRECTIONS
- Place chicken at the bottom of a large slow-cooker.
- In a small bowl whisk together the broth, vinegar, honey, mustard, garlic and spices. Pour over chicken.
- Cook on low for 5 hours or until chicken is no longer pink. Remove chicken, shred and return to crock pot for 1 more hour.
- *In a large saute pan heat oil over medium-high. Add the onion and bell peppers. Saute until onion is translucent, about 5 minutes.
- Prepare the romaine lettuce by cutting about 2 inches up from the base. Wash the leaves thoroughly and lay on a paper towel to dry.
- Add chicken to the bottom half of a romaine leaf, top with onions and pepper and fold the other half of the lettuce over making a vitamin packed sandwich wrap.
