SWEET POTATO TACOS

These tacos are positively delicious...seriously! You may end up eating more than you intended, I know I always do.

With the sweet potatoes and corn included here, these are a next-level dish if you have been doing any type of an elimination diet.  

INGREDIENTS​
  • 1.5 lbs sweet potatoes, peeled and chopped into 1/2 inch cubes
  • 1 large red onion, chopped 
  • 2 Tbsp coconut aminos
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp olive oil
  • 1/2 tsp salt
  • 8 Corn tortillas

Cilantro Lime Vinaigrette:
  • 1/2 cup olive oil
  • 3 Tbsp apple cider vinegar
  • 1/2 large lime, juiced
  • 1 jalapeno pepper, seeded
  • 2 cloves garlic, minced
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/2 cup cilantro, chopped

Garnish Options:
  • Leafy greens
  • Cilantro
  • Avocado
  • Sprouts
  • Seeds or chopped nuts

DIRECTIONS
  1. Preheat your oven to 450 degrees. In a small bowl whisk together the coconut aminos, vinegar, olive oil, and salt. Place prepared sweet potatoes and onions in a single layer on a baking sheet. Drizzle the sauce over the vegetables and toss to coat. Bake for about 20 minutes or until potatoes are tender, tossing halfway through the bake time. 
  2. For the sauce, place all items in a powerful blender and puree on high until smooth.
  3. Warm the tortillas on a griddle set for 350 degrees until soft.
  4. Spoon the sweet potatoes onto the tortillas and garnish as desired. Drizzle with the vinaigrette and enjoy hot.
