INGREDIENTS
- 1.5 lbs sweet potatoes, peeled and chopped into 1/2 inch cubes
- 1 large red onion, chopped
- 2 Tbsp coconut aminos
- 2 Tbsp apple cider vinegar
- 1 Tbsp olive oil
- 1/2 tsp salt
- 8 Corn tortillas
Cilantro Lime Vinaigrette:
- 1/2 cup olive oil
- 3 Tbsp apple cider vinegar
- 1/2 large lime, juiced
- 1 jalapeno pepper, seeded
- 2 cloves garlic, minced
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/2 cup cilantro, chopped
Garnish Options:
- Leafy greens
- Cilantro
- Avocado
- Sprouts
- Seeds or chopped nuts
DIRECTIONS
- Preheat your oven to 450 degrees. In a small bowl whisk together the coconut aminos, vinegar, olive oil, and salt. Place prepared sweet potatoes and onions in a single layer on a baking sheet. Drizzle the sauce over the vegetables and toss to coat. Bake for about 20 minutes or until potatoes are tender, tossing halfway through the bake time.
- For the sauce, place all items in a powerful blender and puree on high until smooth.
- Warm the tortillas on a griddle set for 350 degrees until soft.
- Spoon the sweet potatoes onto the tortillas and garnish as desired. Drizzle with the vinaigrette and enjoy hot.
