SWEET POTATO STEAK FRIES

It's a good idea to keep starchy intake to a minimum, this includes sweet potatoes, but sometimes you just can't resist making these sweet potato steak fries the perfect pair to a barbecued  dinner.

INGREDIENTS​
  • 4 sweet potatoes, cut into 1/2 inch wedges
  • 1/2 Tbsp salt
  • 2 Tbsp olive oil
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp garlic powder

DIRECTIONS​
  1. Bring a large pot of water to boil over high heat.
  2. Preheat an outdoor grill for medium heat.
  3. Place the sliced potatoes and 1/2 Tbsp of salt into the boiling water for 7 minutes or until potatoes are just barely tender. 
  4. Drain the water and carefully toss the potatoes with olive oil, 1 tsp salt, paprika, thyme and garlic powder until evenly coated.
  5. Place the potato wedges onto the preheated grill and cook until potatoes have a slightly crispy exterior. This should take only about 5 minutes depending on your grill. Turn halfway through cook time creating grill marks on two of the sides.
