SWEET & SAVORY CRANBERRY CHICKEN

This dish is a beautiful marriage of savory and sweet. You can use some leftover cranberry sauce for this delectable dish or make it fresh just for this occasion. It really is worth it. 

INGREDIENTS
  • 2 Tbsp olive oil
  • 2 lbs chicken breast, split horizontally
  • Salt 
  • Pepper
  • 1 onion, chopped
  • 2 stalks celery, chopped
  • 1 clove garlic, minced
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1 tsp dried mustard
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1 cup cranberry sauce

DIRECTIONS
  1. Preheat your oven to 400 degrees. Heat olive oil in a large skillet over medium-high heat. Split chicken breasts horizontally and sprinkle both sides with salt and pepper. Brown in the heated skillet, 2-3 minutes on each side. Transfer the chicken to a 9 x 13 glass baking dish.
  2. In the same skillet saute the onion, celery, and garlic until slightly tender, about 4 minutes. In a medium-sized bowl whisk together the vinegar, honey, dried mustard, salt and pepper. Stir in the prepared cranberry sauce until combined. Pour this mixture over the chicken and spread evenly. Bake in the preheated oven for 20-25 minutes.
