INGREDIENTS
- 1 banana, very ripe and mashed
- 3 eggs
- 3 Tbsp honey
- 1/4 cup coconut oil, melted
- 1/2 cup coconut flour
- 1/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1 tsp baking soda
- 1 tsp vinegar
- 1 cup strawberries, chopped
- 1 cup walnuts, chopped
DIRECTIONS
- Preheat the oven to 350 degrees. Line your muffin tin with 12 paper liners.
- With an electric mixer combine the banana, eggs, honey and oil. Add the coconut flour, cinnamon, nutmeg and salt. Once well mixed add the baking soda and vinegar, combine until just incorporated. Fold in the strawberries and walnuts. Evenly divide the batter between the 12 baking liners.
- Bake the muffins for 18-20 minutes or until golden.
