This split pea soup is a great dinner option for cool nights and can be made in large batches for easy freezing and meal prep. The recipe below makes a massive batch, however you may half the ingredients for a smaller turnout.

INGREDIENTS
- 2 lbs. of split peas, soaked overnight
- 10 cups of water
- 3 yellow onions, diced
- 2 cups carrots, diced
- 6 stalks of celery, diced
- 4 garlic cloves, minced
- 3 tsp salt
- 1/4 tsp marjoram
- 1 tsp dried oregano
- Ground black pepper
DIRECTIONS
- Place the split peas in a large pot. Fill the pot with cold water until it rises about two inches above the legumes. Cover and soak overnight.
- On the following day, place the split peas in a large colander, you may have to do this in batches if you are making the full recipe, and rinse with fresh cold water.
- Place the split peas back in the pot along with remaining ingredients.
- Cover and simmer on medium-low for 3 hours. Add additional water or salt depending on desired consistency and flavor. Serve hot.
- Split the remaining soup into covered glass bowls and freeze for later meals.
