SPLIT PEA SOUP

This split pea soup is a great dinner option for cool nights and can be made in large batches for easy freezing and meal prep. The recipe below makes a massive batch, however you may half the ingredients for a smaller turnout.

INGREDIENTS​
  • 2 lbs. of split peas, soaked overnight
  • 10 cups of water
  • 3 yellow onions, diced
  • 2 cups carrots, diced
  • 6 stalks of celery, diced
  • 4 garlic cloves, minced
  • 3 tsp salt
  • 1/4 tsp marjoram
  • 1 tsp dried oregano
  • Ground black pepper

DIRECTIONS
  1. Place the split peas in a large pot. Fill the pot with cold water until it rises about two inches above the legumes. Cover and soak overnight. 
  2. On the following day, place the split peas in a large colander, you may have to do this in batches if you are making the full recipe, and rinse with fresh cold water. 
  3. Place the split peas back in the pot along with remaining ingredients.
  4. Cover and simmer on medium-low for 3 hours. Add additional water or salt depending on desired consistency and flavor. Serve hot.
  5. Split the remaining soup into covered glass bowls and freeze for later meals.
