SPINACH STUFFED CHICKEN

SPINACH STUFFED CHICKEN

This is a great dish for the whole fam and makes a nice switch up from the usual dinner plate. The stuffing here makes the chicken extra moist and flavorful.

INGREDIENTS
Stuffing:
  • 1/2 Tbsp olive oil
  • 1/2 large yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups spinach, chopped
  • 1 tsp salt
  • 1/4 tsp pepper
 
  • 4 chicken breasts
  • Salt
  • Italian seasoning
  • 2 Tbsp olive oil

DIRECTIONS
  1. Preheat your oven to 450 degrees.
  2. In a large saute pan add 1/2 Tbsp of olive oil over medium-high heat. Add onions and garlic. Saute until onions are translucent, about 3 minutes. Remove from heat and stir in the spinach, salt and pepper.
  3. Slice a pocket into each chicken breast. Be careful not to cut all the way through to the other side. It should open like a pita pocket. Sprinkle both sides of each chicken breast with salt and Italian seasoning. Stuff each with the vegetable mixture.
  4. ​Add 2 Tbsp olive oil to the saute pan. Over medium-high heat brown each side of the chicken for 90 seconds. Transfer chicken breasts to a 7 x 11 glass baking dish. Bake in the preheated oven for 20 minutes or until chicken is no longer pink.
