INGREDIENTS
- 2 lbs chicken breast
- 1 large onion, chopped
- 1 1/2 cup carrots, sliced
- 2 sweet bell peppers, chopped
- 3 cloves garlic, minced
- 1 jalapeno, minced and seeded
- 1-14 oz can olives, sliced
- 1 1/2 Tbsp chili powder
- 3 tsp salt
- 2 tsp cumin
- 1 tsp paprika
- 1/2 tsp dried oregano
- 32 oz chicken broth
DIRECTIONS
- In a large slow cooker, place the chicken breasts on the bottom. Add the remaining ingredients to the pot and cook on high for 4 hours.
- Remove the chicken from the pot, shred and place back into the slow cooker for 1 more hour.
- Garnish with fresh cilantro, lime, or avocado.
