SLOW COOKER TACO SOUP

I am always very careful with the spices and seasonings I buy considering that many of them contain ingredients that are hard on the body such as maltodextrin, corn starch, vegetable oil, sugar, and many other less than ideal ingredients. This is why I load this recipe with my own trustworthy spices that work together to create something bold and delicious.

INGREDIENTS
  • 2 lbs chicken breast
  • 1 large onion, chopped
  • 1 1/2 cup carrots, sliced
  • 2 sweet bell peppers, chopped
  • 3 cloves garlic, minced
  • 1 jalapeno, minced and seeded
  • 1-14 oz can olives, sliced
  • 1 1/2 Tbsp chili powder 
  • 3 tsp salt
  • 2 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • 32 oz chicken broth

DIRECTIONS
  1. In a large slow cooker, place the chicken breasts on the bottom. Add the remaining ingredients to the pot and cook on high for 4 hours. 
  2. Remove the chicken from the pot, shred and place back into the slow cooker for 1 more hour. 
  3. Garnish with fresh cilantro, lime, or avocado.
