SLOW COOKER CHICKEN CURRY

Curry is one of my all time most favorite flavors! It is so robust and comforting. And while it goes marvelously with so many dishes, nothing beats the perfect harmony of a warm chicken curry served with traditional vegetables. 

INGREDIENTS
  • 2 lbs. chicken breasts
  • 1- 13 oz can coconut milk
  • 1 Tbsp honey
  • 3 Tbsp curry powder
  • 2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 large onion, chopped
  • 1 bell pepper, diced
  • 3 cups carrots, diced
  • 1 cup fresh cilantro, chopped

DIRECTIONS
  1. Whisk together the coconut milk, honey, curry powder, salt, black pepper and red pepper flakes. Pour the mixture into the bottom of a slow cooker.
  2. Lay the chicken on the bottom of the slow cooker and press down allowing the sauce to submerge the chicken breasts.
  3. Add prepared vegetables to the pot. Spoon the sauce over the vegetables so they may become more flavorful during cooking.
  4. Cook on high for 4 hours. Remove the chicken from slow cooker and shred. Place the chicken back into the opt, stir ingredients and cook for 1 more hour on high heat.
  5. Garnish with fresh chopped cilantro.
