SAUTEED CABBAGE & ALMONDS

I’m perhaps one of the rare creatures who happen to love cabbage and brussels sprouts, and if you're looking at this recipe you may be one too! I absolutely love the flavor and texture of this recipe, especially the little crunch the toasted almonds provide.

INGREDIENTS
  • 2 Tbsp olive oil
  • 1 onion, chopped
  • 1 head cabbage, cored and chopped
  • 1 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 cup almonds, slivered
  • 3 tsp coconut aminos

DIRECTIONS
  1. In a large saute pan, heat the oil over medium-high heat. Add the onion and cook until translucent, about 5 minutes. Next, add cabbage, salt, and pepper and continue cooking until the cabbage is tender, about 10 minutes. Set aside.
  2. Meanwhile, place the slivered almonds in a small nonstick skillet. Stir until lightly toasted, about 3-5 minutes. Add the coconut aminos to the pan and stir another 1-2 minutes or until the sauce is reduced into the almonds. 
  3. Toss the toasted almonds into the cabbage and onions. Stir until distributed. Serve warm.
