ROSEMARY CHICKEN MARINADE

What better way to use up all of that fresh rosemary growing in your garden. The flavor of this dish is so perfectly true to summer.

INGREDIENTS
Marinade:
  • 1/4 cup olive oil
  • 1 Tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 3 tsp fresh rosemary
  • 1 tsp sea salt
  • 1/4 tsp black pepper
  • 4 chicken breasts, butterflied*

DIRECTIONS
  1. In a small bowl whisk together the marinade ingredients.
  2. Butterfly* each chicken breasts and place in a glass bowl. 
  3. Pour the marinade over the raw chicken and toss to ensure coating. 
  4. Cover and marinate in the refrigerator for 30 minutes. 
  5. Preheat an outdoor grill to high heat.
  6. Place chicken breasts on the grill and cook each side for 5 minutes or until no longer pink in the center.

*Halving the chicken breasts is optional but a great way to add as much flavor as possible throughout the meat. It also cuts down on cook time and better ensures the chicken is cooked through.
