These carrots make a great and satisfying side dish. I love them too because I can easily dress them up or down with different spices, and my kids love to dip them in sauce like french fries. Winning! You can also use baby carrots for a bit more ease in the kitchen.

INGREDIENTS
- 2 lbs carrots, washed, peeled, and sliced lengthwise
- 2 Tbsp olive oil
- 1 tsp sea salt
- 1 tsp Italian seasoning
DIRECTIONS
- Preheat your oven to 425 degrees. Line a baking sheet with parchment paper, or lightly grease a casserole dish with olive oil.
- Toss carrots in the olive oil, salt, and seasoning.
- Place the carrots in a single layer in baking dish. Bake for 30 minutes, or until tender when pierced with a fork. Serve hot and fresh.
