OVEN ROASTED CARROTS

Cook Time:  30 minutes
Ready In:  40 minutes

These carrots make a great and satisfying side dish. I love them too because I can easily dress them up or down with different spices, and my kids love to dip them in sauce like french fries. Winning! You can also use baby carrots for a bit more ease in the kitchen. 


INGREDIENTS
  • 2 lbs carrots, washed, peeled, and sliced lengthwise
  • 2 Tbsp olive oil
  • 1 tsp sea salt
  • 1 tsp Italian seasoning

DIRECTIONS
  1. Preheat your oven to 425 degrees. Line a baking sheet with parchment paper, or lightly grease a casserole dish with olive oil. 
  2. Toss carrots in the olive oil, salt, and seasoning.
  3. Place the carrots in a single layer in baking dish. Bake for 30 minutes, or until tender when pierced with a fork. Serve hot and fresh. ​
