I typically find that the most simple dishes are the most gratifying. This rich and easy-to-make cream pairs perfect with fresh fruit, a blanket and a bit of sunshine.

INGREDIENTS
  • 1 cup cashews
  • 1 cup coconut cream
  • 2 Tbsp honey
  • Fresh berries

DIRECTIONS
  1. Place the cashews in a small saucepan and cover with water. Over high heat, boil the cashews for 15 minutes or until they crumble easily between your fingers when pressed.
  2. Drain the water and place in a powerful blender. Add the coconut cream and honey. Puree on high until the mixture is completely smooth.
  3. Pour the cream into a medium glass bowl, cover and refrigerate until chilled and thickened, about 4 hours.
  4. Serve chilled with fresh berries.
