This pumpkin soup is so warm, savory, and soothing. A perfect meal to celebrate any fall evening. 

INGREDIENTS
  • 1 Tbsp coconut oil
  • 1/2 yellow onion, chopped
  • 3 cloves garlic, chopped
  • 1-14 oz can pumpkin puree
  • 2 cups water (or broth)
  • 1 cup coconut cream*
  • 2 Tbsp honey
  • 1 tsp salt


DIRECTIONS
  1. In a large pot, melt the coconut oil over medium-high heat. Saute the onion and garlic for 3 minutes. Add in the pumpkin puree, and water.
  2. Reduce the temperature to medium-low and allow to simmer for 15 minutes.
  3. Transfer to a powerful blender. Add in the coconut milk, honey, and salt. Blend until completely smooth.
  4. Garnish with chives, nuts, seeds, or croutons.
