This pumpkin soup is so warm, savory, and soothing. A perfect meal to celebrate any fall evening.
INGREDIENTS
- 1 Tbsp coconut oil
- 1/2 yellow onion, chopped
- 3 cloves garlic, chopped
- 1-14 oz can pumpkin puree
- 2 cups water (or broth)
- 1 cup coconut cream*
- 2 Tbsp honey
- 1 tsp salt
DIRECTIONS
- In a large pot, melt the coconut oil over medium-high heat. Saute the onion and garlic for 3 minutes. Add in the pumpkin puree, and water.
- Reduce the temperature to medium-low and allow to simmer for 15 minutes.
- Transfer to a powerful blender. Add in the coconut milk, honey, and salt. Blend until completely smooth.
- Garnish with chives, nuts, seeds, or croutons.
