PUMPKIN PIE & PECAN PANCAKES

These pancakes are such a tasty form of pumpkin pie. The texture is dense yet moist in the middle which makes them a bit unlike traditional pancakes but not wanting for deliciousness. Top them off with the honey pumpkin drizzle for extra excitement.

INGREDIENTS

Pancakes:
  • 1 cup pecans
  • 4 eggs
  • 1 cup pumpkin puree
  • 2 Tbsp coconut oil, melted
  • 1/2 Tbsp honey
  • 2 tsp pumpkin pie spice

Honey Pumpkin Drizzle:
  • 1/3 cup honey
  • 1 Tbsp pumpkin puree
  • 1/2 tsp pumpkin pie spice

DIRECTIONS
  1. Place the pecans in a food processor and pulse until powdery. Set aside.
  2. Preheat a griddle to 275 degrees. 
  3. In a small glass bowl whisk together the honey pumpkin drizzle ingredients until smooth. Set aside.
  4. In a medium-sized bowl whisk together the eggs, pumpkin puree, coconut oil, honey, and pumpkin pie spice until smooth. Add in the processed pecans and mix until incorporated. Drop 1/4 cup of batter onto preheated griddle. Cook for 5-7 minutes on first side or until flippable. Cook for another 3 minutes on the second side. 
  5. If desired, warm the honey pumpkin drizzle in the microwave for about 15 seconds. Spoon over fresh pancakes.

Makes 12 small pancakes.
