These pancakes are such a tasty form of pumpkin pie. The texture is dense yet moist in the middle which makes them a bit unlike traditional pancakes but not wanting for deliciousness. Top them off with the honey pumpkin drizzle for extra excitement.

INGREDIENTS
Pancakes:
- 1 cup pecans
- 4 eggs
- 1 cup pumpkin puree
- 2 Tbsp coconut oil, melted
- 1/2 Tbsp honey
- 2 tsp pumpkin pie spice
Honey Pumpkin Drizzle:
- 1/3 cup honey
- 1 Tbsp pumpkin puree
- 1/2 tsp pumpkin pie spice
DIRECTIONS
- Place the pecans in a food processor and pulse until powdery. Set aside.
- Preheat a griddle to 275 degrees.
- In a small glass bowl whisk together the honey pumpkin drizzle ingredients until smooth. Set aside.
- In a medium-sized bowl whisk together the eggs, pumpkin puree, coconut oil, honey, and pumpkin pie spice until smooth. Add in the processed pecans and mix until incorporated. Drop 1/4 cup of batter onto preheated griddle. Cook for 5-7 minutes on first side or until flippable. Cook for another 3 minutes on the second side.
- If desired, warm the honey pumpkin drizzle in the microwave for about 15 seconds. Spoon over fresh pancakes.
