POMEGRANATE & STRAWBERRY SALAD

Sweet and zesty salads never cease to please and surprise. This sweet and tangy salad is the perfect holiday dinner addition. Feel free to add and experiment with different toppings of choice such as avocado, pine nuts, dried cranberries or pears.


INGREDIENTS

Salad
  • 5 ounces baby spinach
  • 1 cup strawberries, sliced
  • 1 honeycrisp apple, diced
  • 4 ounces pomegranate arils
  • 1/2 cup raw pecans, halved (or these candied pecans)
  • 1 Tbsp flaked coconut (optional)

Dressing
  • 1/4 cup olive oil, light tasting
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1 tsp ground mustard seed
  • 1/2 inch fresh ginger, peeled and grated
  • 1/4 tsp sea salt
  • pepper to taste

DIRECTIONS
  1. In a small, powerful blender, combine the dressing ingredients until smooth.  
  2. Combine the salad ingredients in a large bowl. Toss together with the dressing and serve.
