INGREDIENTS
Marinade:
- 1/4 cup olive oil
- 1/4 cup honey
- 1 lime, juiced
- 3 cloves garlic, minced
- 2 Tbsp cider vinegar
- 2 Tbsp prepared mustard
- 1 tsp salt
- 1/4 tsp red pepper flakes
- 6 large chicken breasts
- 2 bell peppers, quartered
- 1 large yellow onion, sliced
DIRECTIONS
- In a small glass bowl, whisk together all marinade ingredients.
- Split chicken breasts horizontally, this is a great way to ensure more flavor is obtained throughout the meat and also allows it to cook quickly and thoroughly.
- Place the chicken breasts in a large glass bowl and pour marinade over the chicken reserving 1/4 cup for veggies later. Cover and marinate the chicken in the refrigerator overnight.
- Preheat an outdoor grill to high heat.
- Toss the bell peppers, onions and any other vegetables in the reserved marinade.
- Place chicken and veggies on the preheated grill. Cook the chicken 5-7 minutes on each side and the vegetables for approximately 3-4 minutes on each side.
