PERFECT MARINATED CHICKEN

If you're trying to soak up as much time on the grill before soup season, this is the way to do it.
This marinade has it all, a little sweet and a lot of savory. Reserve a bit for your grilled veggies and you'll have it made.

INGREDIENTS
Marinade:
  • 1/4 cup olive oil
  • 1/4 cup honey
  • 1 lime, juiced
  • 3 cloves garlic, minced
  • 2 Tbsp cider vinegar
  • 2 Tbsp prepared mustard
  • 1 tsp salt 
  • 1/4 tsp red pepper flakes
 
  • 6 large chicken breasts
  • 2 bell peppers, quartered
  • 1 large yellow onion, sliced

DIRECTIONS
  1. In a small glass bowl, whisk together all marinade ingredients. 
  2. Split chicken breasts horizontally, this is a great way to ensure more flavor is obtained throughout the meat and also allows it to cook quickly and thoroughly. 
  3. Place the chicken breasts in a large glass bowl and pour marinade over the chicken reserving 1/4 cup for veggies later. Cover and marinate the chicken in the refrigerator overnight. 
  4. Preheat an outdoor grill to high heat.
  5. Toss the bell peppers, onions and any other vegetables in the reserved marinade.
  6. ​Place chicken and veggies on the preheated grill. Cook the chicken 5-7 minutes on each side and the vegetables for approximately 3-4 minutes on each side.
