This is such an easy and delicious recipe, and a great way to use up any ripe summer peaches from your tree or local farmers market.
INGREDIENTS
- 6 peaches, peeled and sliced
- 1 cup strawberries, tops removed and quartered
- 1/2 Tbsp honey*
- 1/3 cup walnuts
- 1/3 cup pecans
- 2 Tbsp coconut sugar
- 1 Tbsp coconut oil
- 1/8 tsp salt
DIRECTIONS
- Preheat the oven for 350 degrees.
- In a 9 x 9 glass baking dish place the prepared peaches and strawberries. Drizzle with the honey.
- In a food processor, blend together the nuts, coconut sugar, coconut oil and salt until fine and crumbly. Sprinkle over the fruit.
- Place in the preheated oven for 30 minutes. Serve warm with lightly sweetened coconut cream or coconut ice cream.
