PEACH STRAWBERRY CRUMBLE

Bake Time: 30 minutes
Ready In: 45 minutes
Accommodates: PHASE 1


This is such an easy and delicious recipe, and a great way to use up any ripe summer peaches from your tree or local farmers market.

INGREDIENTS
  • ​6 peaches, peeled and sliced
  • 1 cup strawberries, tops removed and quartered
  • 1/2 Tbsp honey*
  • 1/3 cup walnuts
  • 1/3 cup pecans
  • 2 Tbsp coconut sugar
  • 1 Tbsp coconut oil
  • 1/8 tsp salt

DIRECTIONS
  1. Preheat the oven for 350 degrees.
  2. In a 9 x 9 glass baking dish place the prepared peaches and strawberries. Drizzle with the honey.
  3. In a food processor, blend together the nuts, coconut sugar, coconut oil and salt until fine and crumbly. Sprinkle over the fruit.
  4. Place in the preheated oven for 30 minutes. Serve warm with lightly sweetened coconut cream or coconut ice cream.

*If vegan, honey can be swapped out for coconut syrup.
