PEACH BLUEBERRY CRUMBLE

I love using oats in my crumble topping. It provides such a great flavor and texture. However, oats are best during Phase 2 of the Foods Four Thought Diet. If you are in Phase 1, take a look at the Peach Strawberry Crumble. Another delicious, diet friendly dessert. 

INGREDIENTS
  • 1 cup fresh blueberries
  • 6 peaches, peeled and sliced
  • 1/2 lime, juiced
  • 1/4 cup coconut sugar
 
  • For crumble topping:
  • 2 cups rolled oats
  • 1/2 teaspoon salt
  • 1/2 tsp cinnamon
  • 3/4 cup coconut sugar
  • 1/2 cup coconut oil, softened

DIRECTIONS
  1. Preheat the oven for 350 degrees.
  2. In a 9 x 9 glass baking dish place the prepared peaches and blueberries. Toss with the lime juice and coconut sugar.
  3. In a large bowl blend together the rolled oats, salt, cinnamon, coconut sugar, and coconut oil and salt until soft and crumbly. Scatter over the fruit.
  4. Place in the preheated oven for 30 minutes. Serve warm with lightly sweetened coconut cream or coconut ice cream. ​
