INGREDIENTS
- 1 cup fresh blueberries
- 6 peaches, peeled and sliced
- 1/2 lime, juiced
- 1/4 cup coconut sugar
- For crumble topping:
- 2 cups rolled oats
- 1/2 teaspoon salt
- 1/2 tsp cinnamon
- 3/4 cup coconut sugar
- 1/2 cup coconut oil, softened
DIRECTIONS
- Preheat the oven for 350 degrees.
- In a 9 x 9 glass baking dish place the prepared peaches and blueberries. Toss with the lime juice and coconut sugar.
- In a large bowl blend together the rolled oats, salt, cinnamon, coconut sugar, and coconut oil and salt until soft and crumbly. Scatter over the fruit.
- Place in the preheated oven for 30 minutes. Serve warm with lightly sweetened coconut cream or coconut ice cream.
