This is one of my most favorite dishes! It is so hearty, satisfying and simple.
Something to note is that most coconut milks have thickeners in them. Look for cans that have a short ingredient list, ie. coconut milk, water. My most favorite coconut milk can be purchased in some Walmart stores. I buy mine in bulk here.

INGREDIENTS
- 1 Tbsp olive oil
- 4 chicken breast, cut into 1 inch cubes
- 2 cups baby carrots, sliced
- 1 red bell pepper, chopped
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 cup coconut milk
- 1/2 Tbsp honey
- 3 Tbsp curry powder
- 1 tsp salt
- 1/4 tsp pepper
DIRECTIONS
- In a large pot heat the oil over medium-high heat. Saute the chicken for 5 minutes. Add the carrots, red pepper, onion, and garlic. Saute for another 5 minutes.
- In a medium-sized bowl whisk together the coconut milk, honey, curry powder, salt and pepper. Add the sauce to the chicken and veggies. Stir until combined.
- Bring the contents to a boil then reduce heat to low, cover and cook for 20 minutes or until chicken is cooked through and vegetables are tender. Add additional salt if desired.
