This is about as close to cornbread as you’re going to get, if of course your desire is to omit corn. This remaster of a traditional favorite is so very tasty and makes a perfect side to any dinner or steaming bowl of chili.

INGREDIENTS
- 4 eggs
- 1/2 cup coconut oil, melted*
- 1/4 cup honey
- 3/4 cup coconut flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp apple cider vinegar
- 1 Tbsp coconut oil, melted (or ghee)
- 1 Tbsp honey
DIRECTIONS
- Preheat the oven to 350 degrees. Grease an 8 x 8 glass baking dish.
- In a medium-sized bowl, with an electric mixer beat together the eggs, oil and honey. Pour in the coconut flour and salt, and beat until combined. Add in the baking soda and vinegar and mix until just combined, do not over-mix. Spread and press the batter into the prepared baking dish. Bake in the preheated oven for 18 minutes or until golden around the edges of the pan.
- Meanwhile, whisk together the 1 Tbsp coconut oil and 1 Tbsp honey. Drizzle over the warm no-cornbread and spread with the backside of a spoon.
