INGREDIENTS
- 15 dates
- 1/4 cup cashew butter
- 1/2 cup shredded coconut
- 1/2 cup pecans
- 1 cup freeze dried raspberries
- 1 Tbsp honey
DIRECTIONS
- Line a baking sheet with parchment paper.
- Add all ingredients to a powerful blender. Pulse until the ingredients are adequately combined, moist, and no large date pieces remain.
- Dump the mixture onto the parchment paper, press together and flatten slightly with the palm of your hand. Use a rolling pin to roll it to a 1/2 inch thickness. Refrigerate for 15 minutes. Remove from the refrigerator and cut into shapes.
- These will refrigerate in an airtight container for about two weeks.
