MOLTEN CHOCOLATE CAKE

Fun fact: My kids have been known to actually trade in their Halloween candy in for this cake. This warm morsel of chocolatey goodness really is that good and a close replica to the popular Chili's dessert!

INGREDIENTS

Cake:
  • 1/2 cup coconut oil, melted
  • 1/2 cup cacao powder 
  • 2 tsp coconut flour 
  • 1/4 cup honey 
  • 2 whole eggs
  • 2 egg yolks

Ganache:
  • 1 cup coconut cream*
  • 2/3 cup cacao powder 
  • 1/2 cup honey

DIRECTIONS
  1. For the cake, preheat your oven to 425 degrees. Heavily grease four 4 oz. ramekins with coconut oil.
  2. Whisk together the oil, cacao and flour in a small bowl. 
  3. In a separate medium glass bowl using an electric mixer, beat together 2 whole eggs, 2 egg yolks and honey until frothy, about 1 minute.
  4. Pour the cacao mixture into the egg mixture and beat until creamy. Divide evenly amongst ramekins and place in the oven. Bake for approximately 7 minutes. Cakes should raise slightly, be firm on the outside but still jiggle in the center when shaken.
  5. Once removed allow to sit for about 5 minutes before turning out onto a plate.
  6. Meanwhile, whisk all ganache ingredients together in a medium saucepan over medium heat. Remove from heat once combined and warmed through. 
  7. Lift ramekins away from plates and serve with warm ganache.

*I generally get coconut cream by refrigerating 1 can of coconut milk and removing the solidified cream at the top. Save the remaining milk for another use.
