This is absolutely one of my most favorite soups! The meatballs are so tender and the broth has perfect flavor. Even the kids gobble this one up! Not to mention that it's quick and super easy to make.

INGREDIENTS
- 8 cups broth
- 1 lb. lean ground turkey
- 1 small onion, minced
- 1 clove garlic, minced
- 1 egg
- 1/2 cup coconut flour
- 2 tsp dried basil
- 1 tsp sea salt
- 1/4 tsp black pepper
- 1 cup carrots, diced
- 2 cups Spinach, thinly sliced
DIRECTIONS
- In a large stockpot heat chicken stock to boiling over medium high heat.
- Meanwhile in a medium sized glass bowl combine the turkey, onion, garlic, egg, coconut flour, basil, salt and pepper for the meatballs. Mix together until all ingredients are evenly distributed and moist. Roll into 1 inch balls and set aside.
- Slice the carrots and spinach. Add to the boiling broth along with prepared meatballs. Reduce the heat to medium, cover and simmer for about 20 minutes or until the meatballs are no longer pink in the center and your carrots are tender. Season with additional salt and pepper to taste.
