INCREDIBLE BLENDER BROWNIES

Oh my goodness, these brownies are absolutely...there aren't words. So good! So easy! And you would never ever know that they are vegan, grain-free, and sugar-free.


INGREDIENTS

Brownies:
  • 1/2 cup coconut milk
  • 1/3 cup coconut oil, melted
  • 1 1/2 cups almond flour
  • 1/2 cup cacao powder
  • 1 cup coconut sugar
  • 1 tsp baking soda
  • 1 tsp vanilla
  • pinch of salt

Ganache:
  • 1 cup coconut cream*
  • 2/3 cup cacao powder 
  • 1/2 cup honey

DIRECTIONS
  1. Preheat your oven to 350 degrees. Grease a 9 x 9 glass cake pan liberally with coconut oil.
  2. Place the wet ingredients into a powerful blender first. Add the dry ingredients on top and puree until completely smooth.
  3. Spoon the batter into your greased pan.  
  4. Bake for 30 minutes or until a knife entered into the center comes out clean.  Allow to cool for 10 minutes (if you can).
  5. Meanwhile, combine all ganache ingredients in a medium saucepan over medium heat. Remove from heat once combined, creamy and warmed through. Serve over the brownies. 

*I generally get coconut cream by refrigerating 1 can of coconut milk and removing the solidified cream at the top.
