ICE CREAM SANDWICHES

I’ve found over the years that I love homemade coconut ice cream so much more than anything I can buy in the store. It is so creamy and has such a rich flavor that you can’t find in traditional vanilla ice cream.
These Ice Cream Sandwiches taste so similar to ones you may remember as a kid. The cookies are soft, so chocolatey and the creamy center is pure perfection.

FYI, the recipe for the ice cream is me supposing that you do not have an ice cream maker. If you do, feel free to make this according to the manufacturers suggestions.

INGREDIENTS

Cookies:
  • 1 cup carrots
  • 2 eggs
  • 1/3 cup honey
  • 1/4 cup coconut oil
  • 1/4 cup coconut flour
  • 1/2 cup cacao powder
  • 1 tsp baking soda
  • 2 tsp apple cider vinegar

Ice Cream:
  • 1 cup coconut cream
  • 1/3 cup honey

DIRECTIONS
  1. With electric mixer combine coconut cream and honey. 
  2. Place in the freezer for about 8 hours removing every 2 hours to mix.​
  3. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
  4. In a powerful blender combine carrots, eggs, honey, oil, flour, and cacao powder. Once smooth continue to run blender and add baking soda. After incorporated add vinegar until just combined.
  5. Drop spoonfuls onto prepared cookie sheet. Bake for 12 minutes or until firm on top. Allow to cool completely.
  6. When ice cream is firm drop spoonful onto a single cookie and sandwich with second cookie. Place in the freezer until ready to serve.
