HEALTHY CACAO MARSHMALLOWS

Your kids will have so much fun making these healthy little marshmallows. They are easy to make and you can cut them into fun festive shapes and drop them into your hot cocoa. Use a high-quality gelatin for added nutritional value. I use this one.
 
INGREDIENTS
  • 1 cup water, divided
  • 3 Tbsp gelatin
  • 3/4 cup honey
  • 3 Tbsp cacao powder

DIRECTIONS​
  1. Line a 9 x 9 glass dish with parchment paper that has been greased with coconut oil. Set aside.
  2. In a medium-sized glass bowl pour 1/2 cup water. Sprinkle 3 Tbsp of gelatin over the water and set aside.
  3. In a medium-sized pot heat the honey and remaining 1/2 cup water over medium-high heat. Stirring frequently, allow the honey and water to boil for 8 minutes or until the honey has turned a deep golden color and is fragrant. Remove from heat and whisk in the cacao powder.
  4. Using an electric mixer slowly add the honey mixture to the gelatin. Once all contents are in the glass bowl turn mixer to high and mix for about 10 minutes or until the mixture becomes light in color and very creamy...think marshmallow cream. It will also thicken as it cools.
  5. Immediately pour the mixture into the prepared pan and smooth out. If it’s too thick to spread evenly you can warm it in the microwave for about 10 seconds. 
  6. Allow it to sit in the refrigerator for about 2 hours or until properly set. Cut into squares or fun shapes and enjoy.
