GUT-FRIENDLY VEGAN CHILI

This hearty vegetable chili is savory and satisfying. Feel free to double up the recipe as this is one of those blessed dishes that get better as they sit in the refrigerator.


INGREDIENTS
  • 1 Tbsp olive oil, divided
  • 16 oz bag baby carrots, sliced
  • 1 large sweet onion, diced
  • 2 red bell pepper, diced
  • 1 green bell pepper, diced
  • 3 stalks celery, sliced
  • 3 cloves garlic, minced
  • 2 tsp sea salt
  • 2 tsp Italian seasoning
  • 2 tsp cumin
  • 1 tsp paprika
  • 3 1/2 cups water*
  • 1/4 cup cilantro, chopped

DIRECTIONS
  1. In a large pot heat the olive oil over medium-high heat and sauté the vegetables for 10 minutes.
  2. Add the chili powder, salt, other seasonings, and water.
  3. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes.
  4. Garnish with cilantro.


*If you have broth available, especially if it is homemade, feel free to use it. You may however need to adjust the amount of salt in the recipe.
