INGREDIENTS
- 1 Tbsp olive oil, divided
- 16 oz bag baby carrots, sliced
- 1 large sweet onion, diced
- 2 red bell pepper, diced
- 1 green bell pepper, diced
- 3 stalks celery, sliced
- 3 cloves garlic, minced
- 2 tsp sea salt
- 2 tsp Italian seasoning
- 2 tsp cumin
- 1 tsp paprika
- 3 1/2 cups water*
- 1/4 cup cilantro, chopped
DIRECTIONS
- In a large pot heat the olive oil over medium-high heat and sauté the vegetables for 10 minutes.
- Add the chili powder, salt, other seasonings, and water.
- Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes.
- Garnish with cilantro.
