GRAIN-FREE GRANOLA

​This recipe is great because you really can add any kind of nuts, seeds, or dried fruits that you fancy...or just need to get out of your pantry.

INGREDIENTS
  • 1 cup slivered almonds
  • 1 cup chopped pecans
  • 1 cup chopped walnuts
  • 1/2 cup sesame seeds
  • 1/2 cup shredded coconut
  • 1/2 cup raisins (or other dried fruit)
  • 1 tsp salt
  • 1/3 cup honey*
  • 1/4 cup coconut oil
  • 1/2 Tbsp cinnamon

DIRECTIONS
  1. Preheat the oven to 325 degrees. Line a cookie sheet with parchment paper.
  2. Combine all of the nuts, seeds, dried fruit and shredded coconut in a medium glass bowl. In a small sauce pan melt oil over medium-low heat. Add honey and cinnamon and stir until combined. Pour over the nut mixture. Dump the entire mixture onto the prepared cookie sheet. Bake for 10-15 minutes or until golden brown.
  3. Store in an air-tight container.

*Can easily be made vegan by using coconut syrup.
