GINGERBREAD WAFFLES

These Gingerbread Waffles are an absolute favorite and are particularly perfect during the colder seasons due to their warm flavor and decadent caramel sauce.

INGREDIENTS

Creamy Ginger Caramel Sauce:
  • 1/2 cup honey
  • 2 Tbsp almond butter
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/8 tsp sea salt

Waffles:
  • 6 eggs
  • 2 Tbsp honey
  • 2 Tbsp coconut oil, melted
  • 6 Tbsp coconut flour
  • 1 tsp cinnamon
  • 2 tsp ginger
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 tsp baking soda

DIRECTIONS
  1. For the ginger caramel sauce, place honey in a small saucepan over medium-high heat. Once simmering continue to cook for 1 minute, honey will be fragrant. Immediately remove from heat and whisk in the remaining caramel sauce ingredients. 
  2. Preheat your waffle iron. Whisk together the eggs and honey until smooth. Add in the melted coconut oil, being careful it is not too hot so as not to scramble the eggs, and continue to whisk. Add in the remaining waffle ingredients and whisk until smooth. Spoon the batter onto heated iron. Cook until golden brown. Drizzle ginger caramel sauce over waffles along with fresh fruit if desired.
  3. Makes 4-8 waffles depending on griddle size. ​

Note: As pictured, these waffles are topped with CoYo yogurt.
