Mashed cauliflower is an excellent substitution for comforting mashed potatoes. So, whether you are on an elimination diet, keto, or eliminating starches these are a great dish for your dinner table. 


INGREDIENTS

  • 1 large head of cauliflower, cut into florets
  • 3 Tbsp olive oil
  • 2 cloves garlic, minced
  • ¼ tsp sea salt, more to taste
  • ¼  Italian seasoning
  • ⅛ tsp ground black pepper

DIRECTIONS
  1. Bring a large pot of salted water to boil. Add the cauliflower and reduce heat to medium. Cook covered for 15 minutes until the cauliflower is tender. Remove from heat and drain.
  2. Meanwhile, add the olive oil to a frying pan over medium heat. Sauté the garlic for 2 minutes or until fragrant. Remove from heat and set aside.
  3. In a food processor or powerful blender, add the cauliflower, garlic, salt, Italian seasoning, and pepper. Puree on high until smooth, about 1 minute.
  4. Serve hot and season further to taste.
