INGREDIENTS
- 1 large head of cauliflower, cut into florets
- 3 Tbsp olive oil
- 2 cloves garlic, minced
- ¼ tsp sea salt, more to taste
- ¼ Italian seasoning
- ⅛ tsp ground black pepper
DIRECTIONS
- Bring a large pot of salted water to boil. Add the cauliflower and reduce heat to medium. Cook covered for 15 minutes until the cauliflower is tender. Remove from heat and drain.
- Meanwhile, add the olive oil to a frying pan over medium heat. Sauté the garlic for 2 minutes or until fragrant. Remove from heat and set aside.
- In a food processor or powerful blender, add the cauliflower, garlic, salt, Italian seasoning, and pepper. Puree on high until smooth, about 1 minute.
- Serve hot and season further to taste.
