It’s amazing how quickly a food item can become significantly more interesting to a child when you tell them it’s “fried”. This is at least the case in my house.
I love these little fried zucchinis. The texture is perfect from the vegetable itself to its crunchy exterior. My kids will actually eat zucchini in this fried format, which is a big deal!

INGREDIENTS
- 3 zucchini, quartered lengthwise
- 2 eggs, whisked
- 2 tsp garlic powder
- 1/3 cup coconut flour
- 1/2 tsp dried parsley
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 cup olive oil
DIRECTIONS
- Quarter the zucchini lengthwise. Whisk the eggs then add garlic. In a small bowl combine the coconut flour and spices.
- Add the zucchini to a ziplock bag. Pour in the eggs and shake to coat. Add in the dry ingredients and shake until zucchini is thoroughly coated.
- Pour the olive oil into a large heavy bottomed pan. Heat over medium-high. Add the zucchini strips to the hot oil and fry for about 1 minute on each side totaling 3 minutes of cooking. Add more oil if necessary. Transfer to a paper towel and blot excess oil. Enjoy hot!
