INGREDIENTS
- 1 lb. ground turkey
- 1 Tbsp olive oil, divided
- 1 large sweet onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 3 stalks celery, sliced
- 3 large carrots, sliced
- 1 jalapeño, seeds removed & minced
- 3 cloves garlic, minced
- 3 Tbsp chili powder, divided
- 2 tsp sea salt, divided
- 2 tsp Italian seasoning
- 1 tsp cumin
- 1/4 tsp red pepper flakes
- 32 oz chicken broth
DIRECTIONS
- In a large skillet heat 1/2 Tbsp olive oil over medium high heat. Add the turkey, 1 Tbsp chili powder and 1 tsp salt. Cook until crumbled and browned.
- In a separate large pot heat the remaining 1/2 Tbsp olive oil and saute the vegetables until slightly tender, about 6 minutes. Add the remaining chili powder, salt, other seasonings, broth and cooked turkey to the large pot. Bring to a boil, then reduce heat to low, cover and simmer for 45 minutes.
