This really is one of my most favorite meals. It is packed with flavor and can be made in a huge batch, meaning dinner for days with minimal effort. It's bean-less, low-carb, and tomato-free making it accommodating for a host of diets.

INGREDIENTS
  • 1 lb. ground turkey
  • 1 Tbsp olive oil, divided 
  • 1 large sweet onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 3 stalks celery, sliced
  • 3 large carrots, sliced
  • 1 jalapeño, seeds removed & minced
  • 3 cloves garlic, minced
  • 3 Tbsp chili powder, divided 
  • 2 tsp sea salt, divided 
  • 2 tsp Italian seasoning
  • 1 tsp cumin
  • 1/4 tsp red pepper flakes
  • 32 oz chicken broth

DIRECTIONS
  1. In a large skillet heat 1/2 Tbsp olive oil over medium high heat. Add the turkey, 1 Tbsp chili powder and 1 tsp salt. Cook until crumbled and browned.
  2. In a separate large pot heat the remaining 1/2 Tbsp olive oil and saute the vegetables until slightly tender, about 6 minutes. Add the remaining chili powder, salt, other seasonings, broth and cooked turkey to the large pot. Bring to a boil, then reduce heat to low, cover and simmer for 45 minutes.
