EASY WAFFLES & STRAWBERRY SYRUP

Weekends are for waffles, am I right?! These lovely waffles are so easy my kids made them...AND ate them, which some may say is an even bigger accomplishment as far as kids go.
The strawberry syrup is of course an optional add-on but well worth the extra effort.

INGREDIENTS

Waffles:
  • 4 eggs, room temperature
  • 1 Tbsp coconut oil, melted
  • 2 tsp honey
  • 3 Tbsp coconut flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon​

Strawberry Syrup:
  • 20 large frozen strawberries
  • 1/4 cup pure maple syrup

DIRECTIONS
  1. Preheat your waffle griddle. Whisk together the eggs. Add in the melted coconut oil and honey, whisk thoroughly. Add in the flour, baking soda, and cinnamon. Whisk together until smooth. Pour 1/3 cup of batter onto hot griddle and cook until golden or waffle iron suggests they are done. Makes 4 large waffles. 
  2. For the syrup, place the frozen strawberries in a small saucepan over medium heat. Cook, stirring occasionally, until strawberries become warm and soft. Transfer to a blender and puree until smooth. (Optional step) Place the blended strawberries in a fine mesh strainer over your pan, and press the mixture with the back end of a spoon until juices drip into the pan and only pulp and seeds remain in the strainer.
  3. Add maple syrup to the pureed strawberries in the pot and warm the mixture over medium heat. 
    Drizzle over the waffles and enjoy!
