EASY LENTIL VEGETABLE SOUP

This soup is hearty and positively satisfying. It serves up perfect for a quick lunch or dinner and stores well for about 2 days in the refrigerator. 

If you are in the midst of an elimination diet then lentils are probably not on the docket right now. However, they are a great addition when expanding your diet and should always come before introducing beans as they are typically easier to digest, especially if soaked prior to preparation. 

INGREDIENTS
  • 6 cups water 
  • 1 1/2 cups lentils
  • 2 cups baby carrots, diced
  • 3 celery heart ribs, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup spinach, thinly sliced
  • 1 bay leaf
  • 2 tsp salt
  • 1 tsp dried parsley
  • 1/2 tsp cumin
  • 1/8 tsp pepper

DIRECTIONS
  1. In a large slow cooker add the water, lentils, prepared vegetables and seasoning. Stir, cover with the lid and cook on high for 5 hours or until the lentils are tender.
