INGREDIENTS
- 6 cups water
- 1 1/2 cups lentils
- 2 cups baby carrots, diced
- 3 celery heart ribs, diced
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup spinach, thinly sliced
- 1 bay leaf
- 2 tsp salt
- 1 tsp dried parsley
- 1/2 tsp cumin
- 1/8 tsp pepper
DIRECTIONS
- In a large slow cooker add the water, lentils, prepared vegetables and seasoning. Stir, cover with the lid and cook on high for 5 hours or until the lentils are tender.
