INGREDIENTS
- 8 cups riced cauliflower (or 2 heads)
- 6 cups water
- 2 medium onions, chopped
- 1- 16 oz bag baby carrots, halved
- 5 celery ribs, chopped
- 6 cloves garlic, chopped
- 3 tsp salt
- 1 Tbsp parsley
- 1 tsp basil
- 1/2 tsp oregano
- 1/4 tsp pepper
DIRECTIONS
- In a large pot over medium-high heat, saute the onions, carrots, celery and garlic with 1 Tbsp of olive oil for 6 minutes.
- Add the cauliflower, water, salt, parsley, basil, oregano and pepper. Cover and simmer over low heat for 30 minutes or until the carrots are very tender.
- Transfer half of the soup to a powerful blender such as a Vitamix or Blendtec. Puree until smooth. Transfer to a large glass bowl and repeat with the second half of the soup. Serve hot and enjoy.
