INGREDIENTS
- 1 Tbsp olive oil
- 2 cups carrots, sliced (about 2-3 whole)
- 1 large onion, chopped
- 3 celery stalks, sliced
- 3 cloves garlic, minced
- 6 cups broth
- 2 lbs. chicken breast
- 2 tsp salt
- 1/2 tsp pepper
- 1 tsp dried oregano
- 1 tsp dried parsley
DIRECTIONS
- In a large pot heat the oil over medium-high heat. Add in the sliced carrots and saute for 2 minutes. Add onion, celery and garlic, saute for 5 more minutes.
- Cut the raw chicken breast into 1/2 inch cubes and set aside.
- Pour the broth into the large pot of vegetables. Add the raw chicken and spices. Bring the soup to a boil and cook for another 10 minutes or until the chicken is cooked through and vegetables are just tender.
