These brownies are honestly amazing! My husband even puts them in first position above his most beloved cupcakes, which is a very big deal in our house.
What makes these even better is I can put most of the ingredients into my BlendTec and...presto! They are ready for the oven.
Lastly, you may notice carrots amongst the ingredients. Don't be afraid, your kids will never know. They add an awesome nutritional perk and keep the brownies nice and moist.

*I generally get coconut cream by refrigerating 1 can of coconut milk and removing the solidified cream at the top. Save remaining milk for another use.

INGREDIENTS
Brownies:
- 2 cups carrots, chopped
- 1/2 cup honey
- 1/2 cup coconut oil, melted
- 1 egg
- 1/2 cup cacao powder
- 1/2 cup coconut flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/3 cup walnuts
Ganache:
- 1 cup coconut cream*
- 2/3 cup cacao powder
- 1/2 cup honey
DIRECTIONS
- Preheat your oven to 350 degrees. Liberally grease an 8 x 8 glass baking dish with coconut oil.
- Blend the carrots, honey, and oil together in a powerful blender for 60 seconds.
- Add in the egg, cacao, flour, salt and baking soda and blend for another 60 seconds or until the batter is smooth. Stir in the walnuts.
- Pour the batter into your prepared baking dish, smooth evenly, and bake in the preheated oven for 30 minutes or until a knife inserted into the center comes out clean.
- For the ganache, whisk together the coconut cream, 2/3 cup cacao powder, and 1/2 cup honey in a medium saucepan over medium heat. Remove from the heat once combined and warmed through, about 5 minutes. Drizzle over dished-up brownies.
