INGREDIENTS
- 2 Tbsp coconut oil
- 1 sweet onion, chopped
- 4 garlic cloves, minced
- 3 Tbsp minced ginger
- 1 Tbsp curry powder
- ¼ black pepper
- 2 red bell peppers
- 1 cup dried green lentils, soaked for 1 hr, rinsed, and drained
- 3 cups water
- 1 (14-ounce) can full-fat coconut milk
- 1 teaspoon sea salt, more to taste
- ½ cup diced cilantro
DIRECTIONS
- Melt the oil in a large pot over medium heat. Add the onions and sauté for 4 minutes.
- Add the garlic, ginger, curry powder, and pepper. Stir and cook until fragrant, about 2 minutes.
- Add the bell peppers, lentils, water, coconut milk, and salt. Bring to a boil, cover, and reduce to a simmer, stirring only occasionally, until the lentils are tender, about 30 minutes.
- Stir in the cilantro, season to taste and serve.
