CURRY LENTIL SOUP

This soup is delicious and satisfying. I always enjoy items with curry almost more the second day around as they've had time to sit in this blessed spice combination. 

INGREDIENTS
  • 2 Tbsp coconut oil
  • 1 sweet onion, chopped
  • 4 garlic cloves, minced
  • 3 Tbsp minced ginger
  • 1 Tbsp curry powder
  • ¼ black pepper
  • 2 red bell peppers
  • 1 cup dried green lentils, soaked for 1 hr, rinsed, and drained
  • 3 cups water
  • 1 (14-ounce) can full-fat coconut milk
  • 1 teaspoon sea salt, more to taste
  • ½ cup diced cilantro

DIRECTIONS
  1. Melt the oil in a large pot over medium heat. Add the onions and sauté for 4 minutes. 
  2. Add the garlic, ginger, curry powder, and pepper. Stir and cook until fragrant, about 2 minutes.
  3. Add the bell peppers, lentils, water, coconut milk, and salt. Bring to a boil, cover, and reduce to a simmer, stirring only occasionally, until the lentils are tender, about 30 minutes.
  4. Stir in the cilantro, season to taste and serve.
