If you come to our house on any given summer day, there’s a good chance you’ll find this refreshing cucumber salad in the fridge. It’s so good and stores well chilled and covered for about three days making it a perfect healthy snack to keep on hand.

Cucumbers are such an outstanding source for nutrition. One element that makes them unique and special is their seeds. Most seeds found in fruit and vegetables are nutritious but largely inedible. This is not the case with cucumbers. We can eat their raw seeds and receive the beneficial phytonutrients from them. They are also beneficial for lowering LDL cholesterol, regulating blood sugar and reducing water retention.


INGREDIENTS
  • 2 cucumbers, thinly sliced
  • 1/2 sweet yellow or red onion, quartered and thinly sliced
  • 1/2 cup apple cider vinegar
  • 1/4 cup water
  • 1/4 cup honey
  • 2 tsp dried dill​

DIRECTIONS
  1. In a small bowl, whisk together the vinegar, water, honey and dill.
  2. Place the sliced cucumbers and onion in a medium sized bowl. Toss in the vinegar mix, cover, and store in the refrigerator for at least 1 hour or until chilled.
