CREAMY COCONUT EGGNOG

This decadent holiday classic is both dairy-free and refined sugar-free. It is also booze-less and cooked...I lack adventure, I know.

It truly is so creamy and delicious. My daughter is constantly asking me to make this, and not just during the holiday. Who ever made that rule about eggnog anyway?

INGREDIENTS
  • 1-14 oz can coconut milk
  • 1 cup water
  • 1 tsp nutmeg
  • 3 egg yolks
  • 1/3 cup honey

DIRECTIONS
  1. In a medium-sized pot over medium-high heat, bring coconut milk, water and nutmeg to a boil. Remove from heat.
  2. Meanwhile beat the yolks and honey together. Temper the eggs by slowly pouring and whisking 1/2 cup of the hot milk mixture into the bowl of eggs and honey. 
  3. Pour the mixture back into the pot and set temperature again to medium-high. Cook whisking constantly for 3 minutes. Remove from heat and pour into a glass container. Allow the eggnog to cool in the refrigerator until chilled, about 2 hours.
