CREAMY CAULIFLOWER PUDDING

Shhhh...I won't tell your kids (or significant other) if you don't. The cauliflower in this pudding honestly makes an awesome, creamy base for this surprisingly good dessert. Once you add the honey, cacao and blend it all up, no one will believe it's made primarily from cauliflower, seriously.

INGREDIENTS
  • 1 large head of cauliflower, stem removed and cut in large pieces
  • 1/4 cup coconut oil 
  • 1/2 cup honey (coconut syrup for vegan)
  • 1 cup cacao powder
  • 1/4 tsp sea salt 

DIRECTIONS
  1. Fill a medium pot with 2 inches of water and bring to a boil over medium high heat.
  2. Place cauliflower in the water and boil covered for 15 minutes. Cauliflower should be very soft.
  3. Drain in a colander and allow the cauliflower to sit for 10 minutes allowing the extra water to escape.
  4. Place all ingredients in blender and puree until smooth. 
  5. Serve warm or chilled.
