CREAMY CARROT SOUP

This soup is so easy to make! It is also tasty and surprisingly filling. Serve it up fresh and hot with chopped cashews, pepitas, chives, or perfectly as is.

INGREDIENTS
  • 36 ounces vegetable broth
  • 24 ounces baby carrots
  • 1 large sweet onion, chopped
  • 1/2 cup cashews
  • 2 tsp curry powder
  • 1 tsp salt
  • 1/4 tsp celery seed

DIRECTIONS
  1. In a large pot bring all ingredients to boil over medium-high heat. Cover and cook for 25 minutes. Remove the lid and allow to cool slightly for 15-20 minutes. Add soup ingredients to a powerful blender and puree until smooth. Serve hot and enjoy.
