CREAMY BROCCOLI SOUP

Even my kids gobble up this broccoli soup. It is so tasty and makes a large batch allowing you to freeze some for another meal. Yay! Just be sure to use fresh veggies in order to get the best flavor possible. 

INGREDIENTS
  • 1/4 cup olive oil
  • 1 large yellow onion, chopped
  • 12 asparagus spears, ends removed and chopped
  • 2 pounds broccoli florets, 
  • 2 cups broth
  • 1/4 cup coconut cream*
  • 1 tsp salt
  • 1/4 tsp pepper

DIRECTIONS
  1. In a large pot heat the olive oil over medium-high heat. Add the onions, asparagus and broccoli. Saute until the onions are translucent, about 6 minutes. Pour the broth into the pot, partially cover and cook for 15 minutes. 
  2. Transfer half of the contents in the pot to a powerful blender along with HALF of the cream, salt and pepper. Puree until smooth and transfer to a large glass bowl. Repeat by adding the REMAINING contents of the pot, cream and spices. Puree until smooth and add to the glass bowl. Mix all together. Add more broth for a thinner consistency, and additional salt if desired. Serve warm.

*I generally get coconut cream by refrigerating 1 can of coconut milk and removing the solidified cream at the top.
